Harvest Buddha Bowl

NEW Harvest Buddha Bowl… all the best of the season on one plate.

I wanted something new. I needed to create a new Buddha bowl. One that could also feed the masses for the Rooted in Truth retreat. And this is what came to be. Delicious. Filling. Sweet. Savory.

6 cups arugula or spring mix

2 cups Rice and quinoa mix ( like love Seeds of Change brand)

4 grilled chicken breasts

3 Honeycrisp apples (2 cups warm water, 1 tsp. salt and soak the apples after they are cut. Drain and pat dry before adding to the salad)

1/3 cup craisins

1/3 cup pumpkin seeds

1 small red onion, sliced

1/2 cup roasted cashews

1/2 cup feta or cotija cheese (optional)

Strawberry Poppyseed and Baslsamic glaze for the dressing (I mixed them both. Perfection)

These are my go to dressings for this salad.

Prepare the apples as stated above. Slice the grilled chicken breasts and heat the rice and quinoa mix. Set aside. In a large bowl, layer the ingredients.

All the ingredients.

Toss the salad together and serve with both dressings. Eat. Then eat again. If you are going to meal prep this recipe, serve the dressing on the side, in small containers.
