101 Gourmet No Bake Desserts- Lemon Parfait

And to wet your taste buds, here’s a recipe that I love. Simply cause I love LEMON anything. But really, this is a great cookbook, just in time for summer cause if you’re like me, sometimes it’s too hot to turn on your oven to make something sweet. So what are you waiting for. Go get it now. Lemon Parfait (p. 95)

¾ cup sugar

3 eggs

¼  cup butter

1/2 cup lemon juice (fresh is always best, but not necessary)

1 lemon, zested (approx. 2 tbsp.)

1 recipe Whipped Cream (p.)

1 recipe Vanilla crust (p.)

In a small sauce pan, whisk together sugar and eggs. Then add the butter, lemon juice and lemon zest.  Heat over medium until sauce starts to thicken and come together- about 8-10 minutes, then cool completely. Layer starting with your lemon curd, then whipped cream, the repeat if needed. Ending with the whipped cream. Top with the vanilla crust.

Vanilla Crust (p.121)

2 cups vanilla wafer cookies, crushed

2 tbsp. sugar

6-7 tbsp. melted butter

Mix together until a thick paste forms. crumble on top of Lemon Parfait.
