Greek Lemon Chicken & Rice Skillet- Healthy & Low Cost Meal Series

I’ve been wanting to make a recipe like this since returning from Greece last fall. Plus it’s all in one skillet, less mess & cleanup!

Greek Lemon Chicken Skillet

8-10 chicken tenders or 4 chicken breasts diced

2 cups Jasmine rice

1 lemon sliced thin, and halved- seeds removed

2 cups chicken broth

1 tsp. Kosher salt

1/2 tsp. garlic powder

1 tbsp. dried parsley

1 tsp. dried oregano

2 tbsp. butter, cubed

2 green onions, diced for garnish

1/3 cup Greek Feta (goat milk feta cheese)

Layering the flavors!

Preheat your oven to 350 degrees.

In a large oven proof skillet, add your rice, seasonings and butter. Place your chicken tenders or diced chicken breast on top of the rice and seasonings.

Right before the oven.

Pour the broth on top. Add the sliced lemons randomly on top of the chicken.

Cover and bake for 30 minutes. Remove your hot skillet from the oven. Remove the cover carefully from the skillet. Sprinkle the feta cheese on top of the hot skillet and preheat your oven to broil, 500 degrees. Broil the feta and brown the lemons for 3-4 minutes, watch carefully. Garnish with sliced green onions just before serving.
