Herbed Potato & Sausage Hash

Hey! Credit to my 9 year old for coming up with this recipe. He opened and cut the sausage so I would make it for lunch….. and I have plenty of herbs from the garden. Added a few potatoes and this was lunch. Delicious. Hearty. Easy summer lunch. I am raising a genius- a future foodie and I’m so proud.

Herbed Potato & Sausage Hash

Olive oil

2 large russet potatoes, partially cooked

1 lb. beef or turkey Kielbasa sausage

1/2 cup cooked quinoa

1 tsp. Garden Gourmet garlic paste

1 tsp. kosher salt

Fresh oregano, basil & parsley roughly chopped

3 green onions, diced

1 tbsp. butter (for the end adding a rich, creamy texture)

Preheat your skillet over medium heat with a little olive oil. Add the sliced sausage, into the hot skillet. Brown slightly for just a few minutes on each side. Dice your cooled partially cooked potatoes. Then add your diced potatoes to the hot skillet. Stir to combine. Let the potatoes finish cooking, a few minutes on each side, using a spatula to turn the hash over. The potatoes will be nice and golden. Add the cooked quinoa. Stir. Add the salt and garlic to the skillet and stir the hash one more time. Cook for another minute.

Add the chopped fresh herbs, green onions and butter. Let the butter melt and stir in the the herbs. Serve warm.

Butter and potatoes go hand in hand, am I right?
