Spicy Bacon Gnocchi in 20 Minutes
Gnocchi is a favorite around our house… and when I’m in doubt of what to make for dinner, and I have like 20 minutes, Gnocchi is what’s for dinner. I’m always thinking of new ways to serve it. Here’s a spicy version, with BACON because Benson wanted bacon for dinner. Everyone was happy.
Spicy Bacon Gnocchi
(I made a bunch…. and we ate it ALL.)
2 lbs. baby gnocchi or regular size packaged gnocchi (you can also use cauliflower gnocchi)
1/2 lb. bacon cut into small pieces
1 tsp. minced garlic ( I use dehydrated)
2 tsp. oregano
1 pinch red pepper flakes (or more if you like it hot)
Greek Black pepper ( or fresh black pepper)
1 cup chicken broth
1/2 cup heavy cream
1/2 cup Parmesan cheese, grated
Arugula for garnish
Fried egg for garnish
In a large skillet over medium heat, cook your bacon pieces, stirring frequently, until crispy and golden. Remove the bacon from the skillet using a slotted spoon, and place on a paper towel lined plate to drain and cool.
Pour the extra bacon grease into an empty can to cool. Be careful, it’s hot. I left a little grease in the skillet to cook the gnocchi.
Place the gnocchi into the lightly greased skillet to brown. Cook on medium heat, stirring occasionally until lightly browned, heated through and tender. Add the garlic, oregano, and red pepper flakes. Heat through about 1 minutes then add the chicken broth, cream and Parmesan cheese. Bring to a simmer. As the sauce heats, it will begin to thicken.
Cook your eggs to your liking. We like fried or sunny side up. Set aside.
Assemble your Spicy Bacon Gnocchi.
Place a generous amount onto a plate. Top with bacon crumbles, egg, and arugula. Add some fresh black pepper too! Serve warm. Super yummy. Happy family = happy mom.
