Steak Gnocchi Stroganoff
Who said they wanted some new easy dinner ideas? I know I do! Here’s a great 20 minute meal, with all the flavor and no fuss. A grown up beef stroganoff. Yum.
Steak Gnocchi Stroganoff
4 small sirloin steaks (about 1.5 lbs)
Butter
Fresh Rosemary1
/2 sweet onion diced
16 oz button mushrooms, sliced
1 lb. Prepared gnocchi
1 1/2 c Beef broth
1 c heavy cream
1/3 c Parmesan
Fresh parsley for garnish
In your cast iron skillet over medium heat, add some butter, season your steaks with a little kosher salt.
Cook the steaks and rosemary in the butter until the steaks are cooked to your liking. Doesn’t take long if they are thin.
Remove the steaks from the skillet and set aside. Then add your diced onion, cooking until tender about five minutes, stirring occasionally. Remove your rosemary stems. Add your mushrooms and stir together. Let the mushrooms release their moisture, and stir occasionally as they start to brown. Add your prepared gnocchi and stir together. Cook for 3 to 5 minutes until gnocchi warms through.
Then add the beef broth, heavy cream, stir and bring to a low simmer. Turn off the heat and add your Parmesan cheese. Stir to combine. Slice your rested steaks. Serve your gnocchi with sliced steak on top, and fresh parsley for garnish.
Dinner is served!
