The BEST Chocolate Chip Cookie recipe, ever. In my humble opinion of course.

Editors Note: Please don’t judge this recipe by my photography skills… I am learning. Just focus on the yummy cookie dough being made, and the fact that the cookies will be worth every step. Thank goodness the recipe is easy and fast!

Happy Baking!

Chocolate Chip Pudding Cookies (p.18 in 101 Gourmet Cookies for Everyone)

1 cup butter, softened
¼ cup sugar
¾ cup brown sugar
1 teaspoon vanilla
2 eggs
1 pkg. (4 oz) Vanilla instant pudding mix
(French Vanilla pudding is even better!)
1 teaspoon baking soda
2 ¼ cups flour
2 cups semi sweet chocolate chips (mini is great- every bite is filled with chocolate)

Cream together sugars and butter until light and fluffy.

Add vanilla and eggs, and pudding mix (dry powder only).

In a separate bowl, mix together baking soda and flour and gently add to wet ingredients.

Fold in chocolate chips.

Best cookie baking hint: Use a small cookie scoop to drop dough onto cookie sheet. Refrigerate dough for at least 1 hour- overnight is even better. If you don’t have that much time, place the shaped cookies in the freezer for 20-30 minutes.

Remove shaped cookies from fridge or freezer and place on a baking sheet 2″ apart. Bake at 350 degrees for 8-10 minutes, until sides become golden. Remove from the oven and cool completely on a wire rack.
