Lemon Salmon w/ Pesto Baby Potatoes


I’m all about a great meal, with simple and good ingredients, and one that myself and my kids will eat. This is one of them. We are salmon lovers around here… and this #sheetpan dinner is perfection any night of the week.

Lemon Salmon w/ Pesto Baby Potatoes

2 lbs. salmon fillet

1 lemon sliced

1 lb. baby potatoes

2 tbsp. pesto

1 lb. green beans

Kosher salt

Baking sheet lined with parchment paper

Olive oil or cooking spray oil

Preheat your oven to 425 degrees.

Place your potatoes on the parchment paper, spray with your favorite cooking oil, or use 1 tbsp. olive oil.. drizzle or spray and season with some seasoning salt.

Bake for 25 minutes. Remove from the oven. Carefully move the potatoes to the edges of the sheet pan, making room for the salmon fillet in the middle. Place the salmon fillet in the middle of the pan, season with some salt, and place the sliced lemon on top. Place the pan back into the oven and bake for 20 minutes. Remove from the oven and steam your beans. (I love to buy them ready to steam.)

While the beans are steaming, smash the cooked potatoes with a measuring cup, and drizzle with some pesto. Divide the salmon, potatoes and steamed beans on serving plates. Serve warm. Makes 6 servings.
