Wacky Cake

Chocolate. Chocolate Cake.

Dark rich cake, and fudgy frosting.

Need a good, easy fool proof cake? I want to share with you a great chocolate cake recipe from the Paul family. Wacky Cake.

At this time, we NEED chocolate. I mean, by 3 pm each day, we could all use some chocolate to relieve the stress of it all. I still shake my head, can’t believe that is going on.

Everyone NEEDS to eat this chocolate cake.

Wacky Cake

Preheat your oven to 350 degrees.

Sift together:

3 cups flour

2 cups sugar

4 tbsp. cocoa

1 tsp. salt

2 tsp. baking soda

Set aside.

Mix together:

2 tbsp. vinegar

10 tbsp. melted butter

1 tsp. vanilla extract

2 cups cold water

Beat the wet ingredients with the dry. Just until combined. Bake for 35- 40 minutes, or until cake springs back when lightly touched.

Remove from the oven, and make the frosting.

Whisk together over medium heat until nice and bubbly, or a low simmer:

4 tbsp. each Cocoa, brown sugar, milk and butter

Remove from the heat. Cool the frosting slightly, and powdered sugar as needed to reach your desired consistency. You can cut your cake into layers, and frost each layer, then top with whipped cream if desired.

Pour over or frost the cooled cake.
