Better than TAKEOUT- Vegetable Tikki Masala
This recipe is so fast! And it’s totally delicious. Win-Win.
Vegetable Tikki Masala
2 cups cooked Jasmine rice
1 medium potato
2 carrots, diced
2 celery stalks diced
1 small onion
12 oz. garbanzo beans, drained
2 bay leaves
1 tsp. Kosher salt
1 tsp. Garam Masala
1 jar Patak’s Tikki Masala sauce
14 oz. diced tomatoes
1/2 cup coconut milk
In a large pot, saute the diced potato, carrot, celery, onion and garbanzo beans in some olive oil for 4-5 minutes. Then add the bay leaves, salt and Garam masala. Stir to combine, and saute for 2-3 more minutes. Then add the sauce, tomatoes and coconut milk.
Simmer for 4-5 more minutes, then serve over hot rice with green beans or a large green salad. Perfect weeknight meal.
