Broccoli Cheese Stuffed Potatoes w/ Bacon
You guys. This recipe is FULL of broccoli. And my kids eat it all gone. Every single time. I’ve been making this easy meal for weeks now, at least once a week actually, and it’s a hit every time. It may be the cheese. Or the bacon, but who cares. I’ll take it as a win.
Broccoli Cheese Stuffed Potatoes w/ Bacon
4 large baking potatoes
2 tbsp. oil
1 tsp. Kosher salt
Preheat your oven to 420 degrees. Clean and dry the potatoes. Rub the oil on the potatoes, then sprinkle with the salt. Place the potatoes on a baking sheet, and bake for 50-60 minutes, until a fork goes in easily and potatoes are baked. Remove from the oven and cool for 8-10 minutes.
Slice the potatoes in half, lengthwise, being careful not to burn yourself. Scoop out the inside flesh of the potatoes, and set the potato skin back onto the baking sheet. Place the inside of the potatoes in a large bowl. Repeat until all potatoes are cut in half and ready to be stuffed.
4 cups broccoli cutlets
1 cup sharp cheddar cheese
3 green onions, diced
1 tsp. Kosher salt
1 tsp. Badia complete seasoning
1/3 cup bacon bits
1 cup sour cream
3 tbsp. milk
Stir this mixture together, gently, folding until it’s well combined.
Evenly distribute the mixture into the halved potatoes, then top with a little more cheese and bacon if desired. Which is always the case. More cheese, more bacon. Don’t hesitate.
Bake for 10-12 more minutes, and serve hot.
