Lemon Artichoke Pizza w/ Arugula
Pizza Crust (this recipe makes 2 large pizzas)
14 oz. can artichoke hearts, drained and quartered
1 lemon, sliced thin plus 1 tbsp. sugar
1/2 cup pesto sauce
1 cup shredded or fresh Mozzarella cheese
1/2 cup Parmesan cheese or cotija cheese
2-3 handfuls fresh arugula
Balsamic glaze (optional)
Prepare your dough, recipe from above. Preheat your oven to 500 degrees.
Assemble your pizza. Spread your pesto sauce on top of the dough. Then add the cheese, dip the lemon slices into some sugar, and place the lemon slices, and quartered artichoke hearts. When the lemon slices bake at such a high heat, the flavor deepens, and they caramelize. Talk about a great trick! Bake for 6-7 minutes, until the crust is golden, and cheese is melted. Then broil the pizza at 500 degrees for 2-4 minutes. Watch closely.
Remove the pizza from the oven and top with fresh arugula and balsamic glaze if desired. Cut and serve.
