Mexican Eggs Benedict

Spicy, creamy and delicious.

I’m always looking for fun breakfast ideas… I wanted an eggs benedict but a little different. And I was craving spicy, braised beef….. and here we are. Delicious breakfast or brunch or dinner. We love breakfast for dinner. This was simply amazing. Hope you love it too.

Mexican Eggs Benedict

1 recipe Braised Beef

6 eggs, cooked to your liking

3 English Muffins, opened and toasted

Guacamole

Salsa

Cilantro & Green onion for garnish

Make your beef- you can use your instant pot or crock pot for easy assembly.

Make your hollandaise sauce, set aside. Recipe is easy and fast (below). Toast your muffins, spread a generous amount of guac on each toast. Then place 1/2 cup of braised beef onto each guac covered toast. Top with a egg, drizzle with the hollandaise sauce. Add some salsa, fresh cilantro and diced onions. You can even add some cotija or feta cheese.

Hollandaise Sauce

4 egg yolks

1 tbsp. apple cider vinegar

1 stick butter melted

Cayenne pepper & kosher salt to taste

Place your egg yolks, and vinegar into a blender. Blend until its color changes to light yellow. Over low heat in a double boiler, simmer the yolks mixture until thicker, be careful not to scramble the eggs. Cook slow, stirring constantly.

Remove from the heat and whisk in the melted butter, adding some cayenne pepper for spice and kosher salt to taste.

Set aside while you assemble your Mexican Eggs Benedict.
