Roasted Veggie & Hummus Bowl
In my quest for healthy meals, I managed to make this one. And it was so easy, And took hardly any time at all. We love roasted veggies, and we LOVE hummus. So naturally it all worked out. I’d even add mushrooms, red peppers, zucchini, sweet onion, and more. What’s your favorite vegetable to roast?
Roasted Veggie & Hummus Bowl

1 sweet potato
1 lb. Brussels sprouts
1 tbsp. olive oil
1 tsp. Kosher salt
1 tsp. garlic powder
2 cups instant brown rice
3 ½ cups vegetable broth
Hummus
Green onions for garnish
Preheat the oven to 425 degrees.
Cut the sweet potato into bite size pieces. Cut the ends off the Brussels sprouts. Cut the sprouts in half again. Drizzle with olive oil, and sprinkle with salt. Place on a large baking sheet, in a single layer. Bake fore 25 minutes. Remove from the oven and set aside.
Prepare your brown rice, using the vegetable broth to cook the rice. This will add loads of flavor.
Assemble the bowl; rice, roasted veggies and a dollop of hummus. Green onions and or cilantro for garnish too.
